Maple Popcorn Panna Cotta
Ingredients:
2 cups milk
2 cups heavy cream
1/2 cup maple syrup (plus more to drizzle)
1 tsp vanilla extract
2 packets or 8 leaves of gelatine
Directions:
1. Pop the popcorn pod according to package instructions.
2. In a pot add the milk and heavy cream over low heat. Add in 3/4 of the popped popcorn. Mix well and heat for 20 minutes making sure to not let the mixture boil.
3. Let the mixture sit off the heat for half an hour and then strain the mixture, squeezing as much liquid as you can out of the popcorn.
4. Return the liquid to your pot over medium-low heat and add the maple syrup, vanilla, and dissolved gelatine.
5. Mix well until the gelatine has dissolved. Allow the mixture to cool slightly off the heat before transferring it to individual serving cups.
6. Place cups in the fridge and allow them to set for at least 2 hours. Finish them off with a drizzle of maple syrup and some extra pieces of popcorn.
